How to Recreate Your Fav Dishes This Veganuary
As Veganuary is in full swing, those who have been trying the plant-based lifestyle for the last few weeks might be feeling in need of some more inspiration for new dishes to see them through to the end of the month. Well, fear not! We’ve pulled together a list of some of our favourite vegan dishes available at restaurants in The Light, that you can recreate at home!
Turtle Bay’s Avocado Chili Smash
What you’ll need: an avocado, chopped tomatoes, baby gem lettuce, pickled veg, chickpeas and chili flakes.
Method: Create a bed of lettuce on a plate. In a separate bowl take your avocado and chopped tomatoes and combine using a fork to mash the avocado. Then mix in the pickled veg. Transfer the mixed avocado, tomatoes and pickled veg onto the bed of lettuce and place chickpeas and chili flakes on top (depending on how spicy you want it!).
Fleur’s Green Goddess Protein Bowl
What you’ll need: Edamame beans, broccoli, black kale (or regular kale), quinoa, kimchi, sunflower seeds, miso dressing or vinaigrette of your choice.
Method: Cook the quinoa and allow it to cool. Broccoli can either be steamed or raw, based on personal preference. Then mix together all ingredients and toss together in a bowl. Serve in a bowl or on a plate and enjoy!
George’s Great British Kitchen Vegan BBQ Wings
What you’ll need: Mock duck pieces, BBQ sauce, vegan ranch dressing and lettuce.
Method: Preheat oven to 200C. Marinate the mock duck pieces in BBQ sauce for 20 minutes, and then cook in the oven for 40 minutes. Serve on bed of lettuce with ranch dressing and additional barbecue sauce.
